INGREDIENTS:
1. RED QUINOA - 1 1/2 CUPS
2. MOONG DHAL - 1/2 CUP
3. GRATED COCONUT - 2 TSP
4. RED CHILLIES - 4
5. CUMIN SEEDS - 1/2 TSP
6. ASAFOETIDA - A PINCH
7. CURRY LEAVES - FEW
8. SALT - ACC. TO YOUR TASTE
9. GHEE - 1 TBSP
10. WATER - 3 CUPS
METHOD:
1. HEAT GHEE IN A HEAVY BOTTOMED KADAI . ADD CUMIN SEEDS, RED CHILLIES, ASAFOETIDA AND CURRY LEAVES .
2. WASH THE MOONG DHAL . ADD THE MOONG DHAL TO THE KADAI ALONG WITH RED QUINOA . THE QUINOA CAN BE ADDED DIRECTLY . NO WASHING IS REQUIRED .
3. BOIL WATER IN A PAN . ADD THE HOT WATER TO THE KADAI .
4. ADD SALT AND GRATED COCONUT TO THE KADAI . STIR WELL . CLOSE THE KADAI WITH A LID AND LET IT COOK ON LOW FLAME TILL THE WATER IS GONE . THIS MAY TAKE UP TO 20 MINUTES OR EVEN MORE TIME . THE QUINOA SOJJI IS READY AND IT CAN BE SERVED WITH ANY PICKLE OR CHUTNEY OF YOUR CHOICE . EAT HEALTHY AND LIVE HAPPILY .
