BLACK BEANS RICE


INGREDIENTS:
1. COOKED BLACK BEANS - 1 CUP
2. BASMATHI RICE - 1 CUP
3. COCONUT MILK - 1/2 CUP
4. WATER - 2 CUPS
5. THYME - 1/2 TSP
6. ROSEMARY - 1/4 TSP
7. GARLIC CLOVES - 3
8. ONION - 1
9. PEPPER POWDER - 1 TSP
10. ALMONDS - 10
11. SALT - ACC. TO YOUR TASTE
12. BUTTER - 2 TBSP

METHOD:
1. CHOP ONION AND GARLIC CLOVES FINELY .
2. GRIND ALMONDS WITH 1/2 CUP OF WATER IN TO SMOOTH PASTE .
3. SOAK BASMATHI RICE IN 1 1/2 CUPS OF WATER FOR 15 MINUTES .
4. HEAT BUTTER IN A PAN . ADD THE THYME AND ROSEMARY .
5. ADD CHOPPED GARLIC AND ONIONS TO THE PAN AND SAUTE FOR COUPLE OF MINUTES .
6. ADD PEPPER POWDER .
7. ADD THIS TO THE SOAKED RICE . ADD COCONUT MILK, SALT, ALMOND PASTE TO THE RICE AND PRESSURE COOK FOR 2 WHISTLES . THIS RICE CAN BE SERVED WITH ANY SIDE DISH OR CAN BE EATEN AS IT IS .

SERVINGS: UP TO 4 PEOPLE .
